The prep is really simple. When you have a cut of meat this nice, it really doesn’t take much to get it going.
I just make a paste with a little olive oil, kosher salt, crushed garlic, and fresh rosemary. Rub it on the meat and bake at 350 for 18-20 minutes per pound for medium.
UPDATE: You can also skewer the roast and cook it on your grill’s rotisserie (indirect med/high heat) for the same amount of time, which is what i did here . It bastes itself while it’s cooking and comes our fantastic! So yummy (and idiot proof!)
